Michelin-starred chef Akira Back, best known in Las Vegas for his restaurant Yellowtail at Bellagio, hosts an intimate evening at DragonRidge Country Club in celebration of Valentine’s Day on February 14 from 4:00 p.m. to 9:00 p.m.


The Deets

Where: DragonRidge Country Club overlooks the Las Vegas skyline on the Eastside.

What: A multi-course tasting menu offering a modern twist on Japanese with notes of Korean elegance.

First Course: Tuna pizza topped with micro shiso and drizzled with truffle oil paired alongside a yellowtail serrano dish with micro cilantro served in a bed of blood orange yuzu soy and salmon takaki with charred peaches and cilantro oil.

Second Course: King crab tempura and rock shrimp with Korean chili aioli.

Third Course: Choose from Chef Back’s distinguished recipe of his 48-hour Kobe short ribs inspired by his mother’s cooking, served with baby root vegetables, potato puree and garlic cream or opt for the Jidori chicken with root vegetables and garlic teriyaki.

Fourth Course: Sushi and mini hand rolls with fresh tuna, salmon and popping spicy crab hand roll.

Fifth Course: Kiss of yuzu curd with sable crumble and cardamom ice cream.
