Where: Chablis is a wine region in the northernmost region of Burgundy, France, and also the name of the wine that is made of 100 percent Chardonnay grapes from this area.

• The vineyard sites are mostly located on the slopes of the Serein river valley near the historic town of Chablis.

What: Chablis Premier Cru is a classification of the Chablis wine region of Burgundy, indicating wines of higher quality than those classified simply as Chablis.

Weather: With the juice in the glass, imagine that this wine comes from cooler temperatures, resulting in a crisp, dry wine with spring-loaded acidity.

The Sip

The flavors of Golden Delicious apples and white peaches, butterscotch and a plain yogurt-y creaminess and tension still maintain the cool-climate crispness and the feeling of drinking wine while holding a small pouch of wet stones while walking along a rocky estuary that leads to an oyster bed. And speaking of which, oysters are indeed a classic match to Chablis, but the smoked salmon board is also a winner.

The Bite

The salmon is brought in fresh from a sustainable farm in Patagonia, then smoked locally in Las Vegas. Its silky, delectable, salty and luxurious fattiness not only contrasts this wine’s brightness but also complements its delicate and elegant mouth feel. Together with blinis, Beurre d’Isigny (French butter from the Normandy region) and baguette imported from Paris, this is a quintessential springtime getaway in the glass—right in our own backyard.
