2. Water Grill

The California-based concept is now inside the Forum Shops at Caesars on the Vegas Strip, sourcing its own fish directly under the King’s Seafood umbrella. Pink sea bream, branzino or black sea bass have the option of being prepared as a whole-fish sashimi. 3. Joe’s Seafood, Prime Steak & Stone Crab

Located in the east wing of the Forum Shops at Caesars, Joe’s has a deep and diverse menu, but seafood and steaks remain the specialty. Shrimps, scallops, crab and lobster come prepared in a variety of ways. Yet the stone crabs are the most coveted item when in season. Harvested from the Gulf of Mexico, they’re presented in their shell with guests invited to crack their catch open at the table. The tender, flavorful meat is worth the extra work. Put together your own version of a surf n’ turf and add a prime bone-in filet. All you need is a stiff cocktail or a glass of wine to round out the meal.

4. Estiatorio Milos at Venetian Resort

Estiatorio Milos was a longtime favorite at the Cosmopolitan, but relocated to the Venetian this past year and is better than ever. The daily catch is plucked straight from Mediterranean waters, flown to Las Vegas and on your plate in less than 24 hours. The menu takes inspiration from Greek cuisine with fish prepared one of three ways: as sashimi, grilled in lemon and olive oil or whole-roasted in sea salt. The restaurant also added a raw bar and yogurt-straining program with its recent move to the Venetian.

5. Emeril’s New Orleans Fish House at MGM Grand

Emeril Lagasse’s longest-running Vegas restaurant has been a favorite at the MGM Grand for well over a decade now. The restaurant has seen some renovations and upgrades in recent years, but its dedication to quality and sourcing remains unchanged. Seafood dishes range from Hamachi Provencal (raw hamachi topped with a chilled cucumber-serrano broth, harissa-roasted cherry tomatoes and a light Sauce Vierge) to charcoal-grilled shellfish (with king crab, oysters, prawns, lobster and diver scallops served hot with miso and yuzu butter).

7. Oyster Bar at Palace Station

It’s not too fancy, but the Oyster Bar at Palace Station has developed into an iconic dining destination over the years. The pan roast options with a creamy tomato sauce and raw bar favorites (especially fresh-shucked oysters) are among the most popular dishes. The Oyster Bar is also one of the few places that offer Manhattan-style Clam Chowder on the Strip.

The restaurant operates 24 hours a day, seven days a week, but lines are notoriously long any time of day. Sorry, no reservations.
