There is no denying that Chef Sarah Thompson is one of Wynn’s greatest toques, but the James Beard Foundation has also come to see that she is handedly one of the preeminent Mexican chefs in the country – which is why she is the natural fit to host their “Friends of James Beard Benefit” at Casa Playa on Tuesday, September 26.

For those unfamiliar, Casa Playa is tucked in the corner of Encore’s casino floor and recently underwent a design refresh combining their lounge into the main dining room and the vibe couldn’t be better. In terms of cookery Chef Thompson proffers coastal Mexican faire – think tortillas made from scratch with artisan corn, vibrant ceviche and crudo dressed with the perfect balance of acid and heat, colossal grilled U3 prawns, suckling pig that delivers on the crackling and moles that simply slap (she is the only American chef we’ve experienced that can properly compose a green variety).
For the JBF event expect a reception complete with Ossetra caviar topped Madai, truffle tostadas and a taqueria stand on offer. This will be followed by a four-course plated affair featuring lobster al pastor and snapper a La Brasa. Naturally the evening will be wine and cocktail-paired and shockingly there are still a few seats left for $295 which can be secured online here.
